Chocolate Coffee Coconut Granola

Ingredients:

  • 3 cups old-fashioned rolled oats
  • ½ cup unsweetened coconut flakes
  • ¼ cup cacao nibs
  • ⅔ cup Everyday Cocoa Whey Coffee
  • ½ cup unsweetened apple juice
  • ⅓ cup maple syrup
  • 3 tablespoons virgin coconut oil
  • ¼ teaspoon fine sea salt
  • Optional: add nuts and seeds 

Instructions:

  1. Preheat oven to 325F.
  2. Line a large baking sheet with parchment paper.
  3. Combine oats, cocoa nibs and coconut. Add optional nuts and seeds if using
  4. Heat the protein powder, apple juice, syrup, coconut oil and salt in a medium saucepan, whisk until mixture is just beginning to bubble. Add vanilla.
  5. Pour heated liquid over oats, cocoa nibs and coconut mixture.  Mix to combine
  6. Spread on prepared baking sheet
  7. Bake in preheated oven for 42-45 minutes
